What's For Dinner?

I am interested in getting new ideas for dinners for my family, so what did you guys have/will you have?

We had mushroom stuffed chicken breast, and Margarita pizza (pizza with tomatoes, and globs of cheese).. both came straight from a box, lol

But, I want to actually make something, not just microwave dinner every night.

I like to cook my fiancé chicken Parmesan because he's such a picky eater. I'll bread some chicken breasts then top with marinara sauce and fresh mozzarella. It doesn't take much prepping and comes out pretty fool-proof.

Another one of my go-to meals is a Thai dish called "pad krapow". I take ground chicken and spice it up with chillis, a chili basil paste, some soy or fish sauce, garlic, and lots of basil leaves. Served on rice. Yummy :) Super quick to make.

I made homemade vegetarian lasagna. I use canned kidney beans, black beans, chunky tomatoes, vegetable broth, green red and yellow peppers, onions and garlic. Plus the chili powder, and some garlic powder, oh yeah I also add real garlic cut up. It is super easy to make and super delicious:)

Today I'm gonna have pumpkin soup and probably baked eggplant on the side (dinner is our lightest meal here in Spain, mind you!)

I have to rush to an evening meeting tonight, so I've got leftover vegan mac & "cheese". It's mostly made from butternut squash and sweet potato, and it's topped with roasted mushrooms. I actually like it much better than real mac & cheese, so it's a win :D

Last weekend, I had dinner with my friends at non-veg restaurant. They served the yummiest food.All varities of food is available. I really like chicken Masala , Chicken lollipop and biryani.
